The goal is to pump before grease and solids reach a level that interferes with flow.
Keep a service record that includes the date of pumping, the trap condition, any line cleaning performed, and changes in kitchen volume. If the trap is consistently close to full at service time, shorten the interval. If an overflow happened before the scheduled visit, do not simply reset the same schedule and hope for a different result.
Daily habits matter as well. Train staff to scrape plates and pans into the trash, collect fryer oil properly, use sink baskets, and avoid sending mop water loaded with grease or food residue into the drain. These steps will not eliminate the need for pumping, but they protect the plumbing between visits.
It also pays to act on early warnings. Gurgling drains, slow sink recovery, grease odors, standing water near a floor drain, and a dishwasher that drains poorly are service signals. Calling while the kitchen is still operating normally gives you more options than waiting until wastewater reaches the floor.
